Yes… Buckwheat is naturally gluten-free*! That means that gluten-free and gluten friend folks can enjoy this amazingly adaptable food. We use it in so many things, and one of our staple breakfast bakes is this gluten-free buckwheat pancakes recipe. To save time and fat, we typically make these into a healthy buckwheat coffee cake.
*NOTE: Buckwheat is naturally gluten-free, so long as it’s not processed or packaged in a facility that also processes gluten products.
Let’s face it, pancakes are absolutely yummy, but it takes time standing there cooking and flipping jacks for an hour until all the batter is cooked. So if you have more mouths to feed and you like to make extras to last throughout the week, then the breakfast bakes—aka, coffee cake, but the healthy, non-sugary kind—are the way to go.
If you’re into making all those pancakes, you may want to freeze some, as this will make a lot. Or, you can reduce the recipe in half.
Did you know that buckwheat is not a wheat or even a grain…? Buckwheat is a fruit!

Infinitely Versatile Buckwheat Recipe
This recipe has infinite variations you can try, depending on your preferences as well as whatever ingredients you have on hand. E.g., don’t have almond flour? You can substitute for oat, but since oat is lighter and less fat than almond flour, you might need to add a little more moisture of your choice.
Substitutions
- Want to use less oil and/or butter? Then cut back on the coconut flour, which cooks dryer and add a nut flour and/or other moist ingredients instead.
- No coconut flour? Sub with vanilla protein powder if you have it.
- Don’t have chia seeds? No problem, just omit them or replace with flax, sunflower or other small seeds.
- No maple syrup? Substitute with honey or stevia, add mashed bananas and/or extra apple sauce. Don’t be afraid to experiment.
- No coconut oil? You can use all butter—and vice versa—though it will change the health benefits.
The main issue with this recipe is that it tends to cook dry so any change that reduces moisture and adds dryness will need to be countered. But… if it cooks dry anyway? No problem!
If Your Baked Coffee Cake is Dry, you can…
- Serve with butter or a dab of healthy coconut oil
- Serve with a fruit preserve or berry syrup
- Add a dollop of yogurt… even better with maple syrup added
We like to add extra eggs to ours for added protein benefit, which also makes the pancakes and breakfast bake coffee cakes rise to be fluffy and high. We put these into a rectangular 13″x9″ glass baking dish and cut them into 24 thick bars.
Gluten Free Buckwheat Pancakes
Gluten Free Buckwheat Coffee Cake and Pancake Recipe

Ingredients
- 3 cups buckwheat flour
- 1/2 cup coconut flour
- 1 cup almond flour
- 2 teaspoons baking powder
- 2 tablespoons ground cinnamon
- 1 teaspoon sea salt
- 3/4 cup coconut oil
- 1/4 cup butter (4 Tbsp)
- 6 tablespoons chia Seeds (optional)
- 6 tablespoons flax seed (or 4 Tbsp ground) (optional)
- 1 1/2 cups unsweetened applesauce (we use unsweetened organic)
- 1/2 cup maple syrup (we use 100% pure)
- 12 each eggs (we use large organic)
- 2 cups almond milk, Unsweetened (or other nut milk or cow's milk)
- 2 cups organic blueberries (we usually use frozen berries)
Instructions
- Grease one 9"x 14" oven-safe baking dish (or two smaller ones) with coconut oil or butter.
- Preheat oven to 350℉.
- Combine flours, baking powder, cinnamon and salt in a small bowl.
- Add remaining ingredients and mix together until incorporated.
Notes
Pour batter into the greased 9"x 14"baking dish and bake 25-30 minutes until, like a cake, it bounces back to the touch and/or a toothpick inserted comes out clean.
We cut these into 16-24 pieces, depending on how high and fluffy it rises, and that will vary depending on the variables you use.
OPTIONAL VARIATIONS:
All kinds of substitutions are possible, including any one or more combinations of these:
- Elderberries (fresh or frozen)
- Goji Berries (fresh, frozen or dried, but soak in water or apple juice to soften first)
- Blueberries (fresh or frozen)
- Nut mix (with or without berries)
- Bananas (ripe, mashed)
- Apples (grated)
- Chocolate chunks – we prefer the soy-free Enjoy Life brand
- Vanilla protein powder – (add a little moisture to compensate for the dryness of the protein powder)
We use BioTrust protein powder because it contains soy-free quality ingredients.
Pour batter into the greased 9″x 14″baking dish and bake 25-30 minutes until, like a cake, it bounces back to the touch and a toothpick inserted comes out clean… firm but moist.
We cut these into 16-24 pieces, depending on how high and fluffy it rises.
Serving Ideas
- Plain
- With butter or a dab of coconut oil
- With maple syrup (definitely brings in the pancake experience, even if you add it to the bars. We just our bars in half horizontally, and open the top and bottom and add a little maple syrup there. Yummy!
- Topped with homemade elderberry syrup (or other berry syrup)
- Topped with a dollop of homemade whipping cream and berries or berry syrup (always an attractive crowd pleaser)
- A swizzle of nut butter syrup – (here’s a great recipe for that)
So, as you can see, as with any pancake recipe, these have virtually endless combinations of ingredient and topping options. So start with this basic recipe and branch out into some of your favorite additional ingredients or toppings.
Our Favorite Way to Experiment:
Make this large recipe (which is actually a double amount), but before you add any of the additional fruits, nuts, etc, divide it in half (or more). Then add one batch of options to one batter, such as chocolate and nut mix, and add the berries to the other mixture.
If you love to experiment, to double and divide you recipes in this way leverages your time and increases your ability to test more options more quickly. You will have two versions to enjoy, plus you can also experiment with various toppings for each serving.
