Lemon Poppyseed Bread with Goji Berries Recipe

One of my favorite things to do on the weekends is try out new recipes. As someone who has a lot of food sensitivities (gluten, soy, yeast, to name the primary ones), I am no stranger to modifying many recipes as needed.

During the week I like to collect various recipes from Pinterest, Whole Foods, and other sites to try out on the weekends.  Typically, the results are enjoyable even for the rest of my family (I’m so glad my parents and brother are willing to try new things as well!).

This weekend I found a recipe for Blueberry Lemon Bread and while I used the measurements of the recipe, I altered so much it’s hardly the same thing.

This bread has an almost cakey like texture in that it is very moist, tho it is not as sweet or spongy as a traditional cake. I would classify this as a pastry, not an "everyday" bread.

Instructions
  1. Preheat oven to 350′ F. Grease a loaf pan and cut a piece of parchment paper to line the bottom of pan.
  2. Combine almond flour, coconut flour, baking soda, and salt in a large bowl. Set aside.
  3. Whisk together eggs, coconut oil, honey/maple syrup, lemon juice, and lemon zest, poppy seeds and goji berries until well combined.
  4. Add wet ingredients to dry and mix until well incorporated.
  5. Spread 1/3 of the batter onto bottom of prepared pan. Sprinkle 1/3 of the goji berries on top.Spread another third of the batter and another third of the blueberries. Repeat one more time with the remaining batter and berries.
  6. Bake 35-40 minutes, until toothpick inserted into center comes out clean. Cover with foil if top begins to brown too much. Remove from oven and allow to cool.
  7. Once loaf has cooled, remove from pan and enjoy!!

You can use a lot of different flours in this recipe, you just need adjust the liquid depending on what you're using as some of them can be dry (like qunioa flour).
