Oat Flour Blueberry Muffins

Instructions
Muffin Instructions
  1. Preheat over 350F.
  2. Add all ingredients except blueberries into blender. Blend on low until smooth.
  3. Fold blueberries into batter.
  4. Line muffin tins. Fill with batter, about 1/3 cup of batter in each. Or till the tin is 2/3rds full.
  5. Bake 20-25 minutes. They don’t brown on the top much.
Syrup Instructions
  1. Put thawed frozen blueberries to sauce-pan.
  2. Bring to boil for 15-20 minutes. Then, let them simmer for 5-10minutes. Until the syrup starts getting thick.
  3. Turn off heat and mix in honey and lemon.
Recipe Notes

If you use frozen blueberries, you might need to increase cooking time to allow for them to cook down the extra liquid during as the berries thaw.
